I have been meaning to share this recipe for years now and some how it was placed on back burner. But not today. Sometimes people think that raw vegans eat like a rabbit. All we eat is carrots and lettuce. I am not saying we don't eat lettuce and carrots but there is a broad spectrum to what we have, especially in the gourmet world of raw veganism. I have had a plethora of things from "chicken," nuggets, cake and donuts. Today I share my favorite on the breakfast side. Can we say hello pancakes. Try this recipe out and tell me what you think.
Raw, Vegan Banana Pancakes
Serves 1 (about 4-5 pancakes)
1 large banana
1/4 cup rolled oats
2 tbsp flax meal
1 tsp cinnamon
1/4 cup water
Blend all ingredients together in a blendee. The mix should be similar to regular pancake mix; if you need more water.
Pour in 1/4 cup spoonfuls onto a Teflex lined dehydrator tray. You should get about 4-5 pancakes.
Dehydrate at 115 degrees for about 2 and a half hours. Flip the pancakes using a spatula and dehydrate for another two and a half. Try not to over dehydrate, check the pancakes often.
Serve with bananas and berries!
