I was really excited when I made this recipe. I wanted a raw energy ball with a lemony feel. I intuitively put these ingredients together and magic happened. It reminds me of a not so healthy cookie I enjoyed as a child. I had my  client try a few, it was followed with a special call, “Why don't you open a restaurant.”

If you like lemon flavor this is the recipe for you. I acquired the strong lemon flavor by adding both lemon zest and Nature’s Fusion lemon essential oil. I love to use essential oils as a flavoring agent.  You can use essential oil to replace equivalent herb or spice. A good rule of thumb is that a drop will replace a teaspoon and that you don't need more than one or two drops for a full recipe.


1 ½ Cups  raw cashews

1 cup desiccated coconut

6 medjool dates (pitted)

1 teaspoon ground turmeric

¼ teaspoon Himalayan sea salt

Zest from 1 lemon

3-4 drops of lemon essential oil (I use Nature’s Fusion)

1 tablespoon of coconut oil


Mix lemon essential oil into coconut oil, set aside. Place cashews in food processor. Pulse for 15 secs or until ground. Add remaining ingredients to the food processor process until it starts to clump together and form balls. Remove mixture from food processor and form small 1 inch balls. Place in fridge for 15 minutes then enjoy. Store in fridge.
