Happy National French Fry Day! While I was moving through the interwebs I discovered today was dedicated to celebrating French Fries. I wanted to do something funky.
Say Hello to my Loaded Baked Plantains Fries!
I played with a few ideas mentally but felt like this was the way to go. My current pudgy cosigns it was definitely a winner. The star for this recipe is the plantain. The key is that the plantain is yellow but not soft. Every thing else is easy peasy.
Baked Plantain French Fries
Ingredients:
2 yellow plantains
2 Tbsp olive oil
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprika
1/8 cayenne pepper
Preheat oven to 400°F.
Cut the Plantains into the shape of fries.
Spread fries on a baking sheet.
Brush fries with olive oil.
Combine salt, garlic powder, onion powder, paprika and cayenne pepper; Sprinkle mixture on fries.
Bake at 400 degrees for 20 minutes. turning them over about after 10 minutes.
Remaining Loaded Ingredients:
1 Avocado
Cilantro, chopped
Red onions, chopped
Jalapeno, sliced
Black Beans, cooked and seasoned
Tomatoes, chopped
2 Tbsp Vegan Mayo
1 Siracha
Directions
- In a bowl combine mayo and Siracha mix well.
- Place cooked fries on a large plate or platter.
- Top with remaining ingredients and serve! .
