I have fallen in love with arugula. I've been using it in so many ways. Including using it as a replacement for basil And pestos. The salad that I'm sharing with is my go to salad it is super super yummy and my clients love it.

This sald will have you fall in love with arugula.

Ingredients
- 4-5 cups of Arugula
- 10-14 black olives, sliced
- 1 cucumber, sliced
- ¼ cup marinated artichoke, chopped
- ½ red bell pepper

1/3 cup Vegan Feta (violife or follow your heart brand)
- ¼ cup balsamic vinegar
- 1 tbsp stone ground mustard
- 1 tbsp agave
Directions
- In a bowl mix olive oil, balsamic vinegar, mustard and agave.
In another bowl add the remaining ingredients, mix well. Add dressing when ready to serve.
