Chia Pudding: 3 Ways

CH-CH-CH-CHIA ! If you are an 80s baby, you will have memories of the Chia pet commercial with the catchy jingle. You may have even convinced your parents to purchase you a chia pet. I definitely did? Would you have ever imagined that the chia seed would be superfoods craze of today? YES! You read right, the chia seeds that we used as kids for our chia pets is the same chia seeds we use for our chia pudding.

Chia is an edible seed that comes from the desert plant Salvia hispanica, grown in Mexico dating back to Mayan and Aztec cultures. "Chia" means strength, and folklore has it that these cultures used the tiny black and white seeds as an energy booster.

Chia seeds are an unprocessed, whole-grain food that can be absorbed by the body as seeds. One ounce (about 2 tablespoons) contains 139 calories, 4 grams of protein, 9 grams fat, 12 grams carbohydrates and 11 grams of fiber, plus vitamins and minerals.

How do you use chia seeds?
Chia seeds can be mixed into drinks and baked goods. They also are a great egg replacer.  Combine one tablespoon of ground chia seeds with three tablespoons of water. Whisk together the ground seeds and water until well combined, then place in the fridge to set for 15 minutes. This will serve as a substitution for one egg. What chia seeds have become known for, more recently, is chia pudding. I am going  share my 3 favorite chia seed pudding recipes.  For these recipes I used Ideal Raw Chia seeds. The general rule of thumb for making chai pudding is ratio: 3 tablespoons of chia per cup of liquid. As for the texture, it’s like a thick, creamy tapioca pudding. And chia seeds have no flavor so the pudding will taste like whatever liquid and mix-ins you’re using.

Blueberry Chai Pudding

Ingredients:
  • 6 Tablespoons chia seeds
  • 2 cups unsweetened coconut, almond or cashew milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 1 Tablespoon maple syrup, agave or sweetener of choice (optional)
  • 1/4 cup blueberries

Instructions:

In blender add all the ingredients except chai seeds. Blend until smooth. Pour contents into a bowl and  whisk in chia seeds. Let it sit for 5 minutes,  then give it another stir or shake to break up any clumps of chia seeds. Pour into a jar or glass container. Place in the refrigerator for at least 4 hours or overnight to let gel.

Cacao Chai Pudding

Ingredients:
  • 6 Tablespoons chia seeds
  • 2 cups unsweetened coconut, almond or cashew milk
  • 1/4 cup cacao or unsweetened cocoa powder
  • 1 teaspoon cinnamon
  • 2 Tablespoons maple syrup, agave or sweetener of choice (optional)

Instructions:

In a bowl or mason jar, mix together all the ingredients together. If you’re using a mason jar, you can put the lid on and shake the mixture to combine everything..  Let it sit for 5 minutes,  then give it another stir or shake to break up any clumps of chia seeds. Pour into a jar or glass container. Place in the refrigerator for at least 4 hours or overnight to let gel.

Almond Chia Pudding

Ingredients:
  • 6 Tablespoons chia seeds
  • 2 cups unsweetened almond
  • 1 teaspoon almond extract
  • 1 teaspoon cinnamon
  • 1 Tablespoon maple syrup, agave or sweetener of choice (optional)

Instructions:

In a bowl or mason jar, mix together all the ingredients together. If you’re using a mason jar, you can put the lid on and shake the mixture to combine everything..  Let it sit for 5 minutes,  then give it another stir or shake to break up any clumps of chia seeds. Pour into a jar or glass container. Place in the refrigerator for at least 4 hours or overnight to let gel.

When ready to serve, divide the mixture between two bowls, top the pudding with fruits and enjoy.
