Its mango season and its time to have mango bread. Mango season makes me very happy. I am a mango fanatic. Exhibit B below
I made this recipe quite a while ago, 2005 to be exact . I was dating someone who has the same passion for mangos as I do. Made it and the rest is history. I meant to post it last mango season but there's no time like the present. Think banana bread but instead we have mangos. It's moist and sweet. Definitely in a crowd pleaser unless the person doesn't like mangos. Try it out and tell me what you think.
Ingredients:
Dry
2 cups Spelt flour
1/2 cup walnuts, chopped
4 tsp baking powder
1/2 tsp cinnamon powder
1/4 tsp sea salt, or to taste
1/4 tsp nutmeg, ground
Wet
1 cup mango, mashed and chopped
1/2 cup maple syrup
1/2 cup apple sauce, sugar free
1/2 cup date piecss
1/4 c safflower oil
1/2 tsp vanilla extraxt, alcohol free
Directions:
- Preheat oven to 350°. Place dry ingredients in a large mixing bowl and mix well.
- Combine wet ingredients in another bowl, add dry ingredients and mix well. Pour into a well oiled 5" x9" loaf pan and bake for one hour, or until a toothpick comes out dry.
