These pancakes are not only green, but they are also packed with plant-based protein thanks to Earth Chimp Vanilla Protein powder. Ingredients:

  • 1 cup gluten-free flour
  • 1 cup plant-based milk
  • 1 serving of Earth chimp vanilla protein
  • 1 cup baby spinach
  • 1 tablespoon almond butter
  • 1 tablespoon coconut sugar (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons aquafaba
  • Zest from lemon

Instructions:

  1. In a blender, add plant-based milk, almond butter, aquafaba, vanilla extract, and spinach. Blend until smooth.

  2. In a separate mixing bowl, mix the gluten-free flour, Earth chimp vanilla protein, coconut sugar (if using), baking soda, salt, and lemon zest.

  3. Add the wet mixture to the dry mixture and mix until blended. Do not over-mix.

  4. Heat a lightly oiled griddle or pan over medium-high heat.

  5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until bubbles form and the edges are dry, about 2 to 3 minutes.

  6. Flip the pancake and cook until browned on the other side.

  7. Repeat with the remaining batter.

  8. Serve hot with your favorite toppings.
