Raw "Chikin" Chickpea Salad
So this is not where I tell you this taste "Just Like Chicken." I am not even sure I remember what check taste like if I am honest. It has been 17 years since I had my last piece of chicken. My farewell meal was Chicken Parmesan at Caraba's it was one of my favorite dishes at the time. Now that I think about it maybe I will make try to convert that recipe or may be not. My goal has to have more whole plant-based the longer I have been vegan.
So back to our recipe. On today's menu we have a Fully Raw Chikin Salad. I use raw sprouted chickpeas and include a raw mayonnaise recipe. It is pretty awesome recipe not to toot my own horn. It adds a nice twist on what you can have when you are fully raw. Try it out and if you love it leave a comment below.
Raw Mayo
2 cups cashews, soaked for 4-6 hrs
1 cup water
1 clove garlic
2 teaspoons herbamare
2 tablespoons lemon juice
1 medjool date
Dash of cayenne
Place all ingredients in vitamix or high speed blender and process on high until creamy. Mayonnaise will keep for 2 weeks in fridge or 3 months if frozen in resealable bag.
Raw Chikin' Chickpea Salad
1 cup of dry chickpeas
2 cups of water
2 celery stalks, chopped
1/2 small red onion, chopped
1/2 cup raw mayo
Romaine leaves
Sprouts
Tomatoes
Salt to taste
Rinse dry chickpeas well, removing debris. Place in a bowl and cover with water. Let soak for 8 hours or overnight. Drain and rinse well. In a food processor add 2 cups of sprouted chickpeas, celery, onions, and raw mayo. Pulse a few times until the texture is roughly chopped, and then season to taste with salt. Layer chickpea salad on romaine leaves and top with sprouts and tomatoes.
